Le Piane ‘Mimmo’ Vino Rosso Boca
This wine is a blend of Nebbiolo, Vespolina, and Croatina. Give it 10 minutes in the fridge and pop it open with Veal or Eggplant Parmigiana. The grapes are destemmed and manually punched-down in large wooden vats, where they macerate for 50-60 days. The wine is then aged in casks for a few years until bottling without fining or filtration. A classically sharp and grippy Nebbiolo meets the softer and earthier Vespolina and Croatina to make a refreshing and complex food friendly red.Â
