We selected barrels of mixed fermentation Grisette to create a blend with balanced acidity and funk while remaining refreshing and drinkable. We took a day to process 300 lb of Connecticut peaches in August of 2021 and let the beer go through secondary fermentation on the fruit. After many months the beer was bottled. A third fermentation in the bottle allows natural carbonation to build and flavors to meld and mature. After 4 months in the bottle we think it is finally ready to enjoy.
