Convento San Lorenzo ‘Ventum’ Sforzato di Valtellina DOCG, 2018
This wine is made of 100% Nebbiolo. We would pair it with veal osso buco. The Sforzato di Valtellina DOCG is known for powerful red wines made from dried Nebbiolo grapes. It is a passito wine, but unlike the other sweet ones, it is classically dry, having more in common with Amarone della Valpolicella. Sforzato literally translates to “forced”, and is a method of forcing the grapes to concentrate their sugars and obtain higher alcohol and depth. Sforzato grapes are dried for over 100 days, allowing the sugars to concentrate and develop complex flavors and aromas. “Ventum” has rich flavors of red and black fruit, and a pleasant earthy spice. This is a big and incredible wine.
