Bodegas Juan Gil Blue Label Jumilla, 2021
This wine is made of 60% Monastrell (Mourvèdre), 30% Cabernet Sauvignon, and 10% Syrah. Mainly produced with grapes from very old Monastrell vineyards of low yield, as the Cabernet Sauvignon and Syrah vines were planted at about 700 meters of altitude, this is a very concentrated, complex and elegant wine, kept for 18 months in French and American oak barrels. Powerful aromas of black fruits and spicy notes, followed by bold tannins and great length. We would pair this wine with Pernil, a Puerto Rican style pork shoulder marinated in sofrito, garlic, and sazón, of course, with some cilantro lime rice.
