Traditional Berliner Weisse. Mixed fermentation with Brettanomyces and Lactobacillus.
The Weisse seems like a mysterious sparkling wine in the glass, fine bubbles pearl up.
It smells of French cider and freshly squeezed apple juice, the initial taste is reminiscent of grated Boskoop apples. The second sip also reveals orange and citrus notes, melon, cucumber, dill and mustard seeds. At first sweet, then subtly sour, the finale concludes harmonious and round – a wonderfully complex taste sensation.
