Domaine François Mikulski Bourgogne Blanc, 2021
This wine is made of 100% Chardonnay. The grapes come from vines around 25 years of age on four separate plots in Mersault. Two-thirds of the juice is fermented in large oak, 10% of which is new oak, with the remaining third of juice being fermented in tank. The wine sings with a balance of crystalline pure fruit and texture from the oak, and would be a lovely pairing with crab cakes and roasted potatoes with lemon, thyme, and oregano. François Mikulski’s family is originally from Poland, but his father left in 1939, and eventually settled in Dijon, France, where François was born. He does not have a large line of vignerons before him, but makes delicious white Burgundy nonetheless.
