Domaine Pattes Loup ‘Vent d’Ange Mise Tardive’ Chablis, 2020
This wine is made of 100% Chardonnay. The wine is racy and mineral, and as ‘Vent d’Ange’ literally translates, it is the “wind of the angel.” ‘Mise de Tardive’ also clues in to the wine, referring to the wine’s extended lees aging. Crisp with a juicy, lingering, finish and perfect with Moules Frites. Thomas Pico has converted the domaine to organic farming, which is difficult in such an inhospitable growing climate. Everything is harvested by hand, and there is a strict focus on quality in yield control. Around 40% of the juice is fermented in concrete eggs, with the rest done in stainless steel. Thomas Pico’s wines are some of the most charming and intriguing coming out of Chablis today, and a real treat for all wine lovers.
