Domaine Santa Duc “Habemus Papam” Châteauneuf-du-Pape, 2019
From the Winery:
A pontifical wine, which draws its strength and confidence from several sectors of the appellation. Each locality brings its stone to the building. Plots located exclusively in places called Le Pradel and La Font du Pape, respectively to the east and in the center of Châteauneuf-du-Pape. Rich sandy-clayey soils on the surface and very calcareous in the subsoil with the participation of rolled pebbles.
CULTURE: Organic farming, Ecocert and Biodynamic certified, Demeter certified.
70% Grenache, 30% Syrah
AGE OF THE VINES: 60 years on average.
HARVEST & VINIFICATION: Manual harvest in crates with sorting in the vineyard, followed by a second on the sorting table. Partial destemming. The percentage of destemmed grapes is decided according to the vintage and the plots. Gravity vatting with total respect for the integrity of the grapes. Fermentation for 20 to 30 days in stainless steel vats under controlled temperatures. Two long daily pumpings. Pigeage decided at the tasting. Pressing in a pneumatic press. Malolactic fermentation in tank. Clarification of wines in the cellar during the winter. Maturing in the spring.
AGEING: 18 months in 36 hectoliter Stockinger oak barrels and 8 hectoliter terracotta jars. Bottling without fining or filtration.
PERSONALITY: The Provençal translation of La Font du Pape suggests a humid place conducive to Syrah, or rather Serines, which express their freshness and crunch. Through the major grape varieties of our region, Grenache and Syrah, this union of terroirs finds its raison d’être in the coherent and elegant wines it creates.
