O Patron in Gallego means “the boss” and Alfonso is the boss! The parcel has an onyx component in the soils and onyx is “Onice”.

The vineyard is a 0.4 hectare parcel owned by Alfonso Rodriguez who is the uncle of Carlos and Juan from Silice. The parcel is located near Doade and has 30+ year old vines of Mencia.
Soil: Granite
Viticulture: While the vineyard is not farmed organically, Alfonso does not use glyphosate and does not like working with chemicals but conventional treatments are used if they are absolutely needed.
Vinification: Grapes were harvested by hand and destemmed, then fermented with native yeasts in stainless steel tank. After two weeks of maceration with daily remontage for a pop of color and tannin, the wine was pressed and returned to stainless steel tank, where it completed fermentation and malolactic conversion and aged for one year. A light filtration was carried out before bottling. 1 year in stainless steel.
