Monte Dall’Ora ‘San Giorgio Alto’ Valpolicella DOC Classico Superiore, 2018
This Valpolicella Classico Superiore is made of a blend of Corvina, Corvinone, Rondinella, Oseleta, and Molinara. The wine has a medium bodied palate of fresh cherry and spice notes with a whole lot of structure. We would pair this with a hearty dish of Pasta e Fagioli. San Giorgio Alto is a site several miles northwest of the Monte Dall’Ora estate, closer to Lake Garda. The grapes are facing southwest at a steep incline, and are surrounded by forest and other wild growth. Farming is all biodynamic and hand-harvested. The wine is aged for a year in a 25-hectoliter botte previously used to age their Amarone. It is bottled without filtration and aged 6 more months.
